What are you doing with your leftover turkey and other Thanksgiving goodies?

I brought home some turkey from my brother's and plan to make my own stuffing and gravy for hot sandwiches.

On thanksgiving we have a large variety of meats: Honey Ham, Duck, Turkey, Rabbit, Chicken.

So with all the leftover scraps of the different meats my dad is making a giant gumbo. It's soooo yummy :)

Sandwiches. :) Mashed potatoes, and turkey wrapped in Pita bread. Mmmm.

Turkey Waldorf Salad - 4 servings

1 cup diced roasted turkey
1 cup diced red apples, unpeeled
1 cup diced green apples, unpeeled
1 cup diced celery
1/2 cup walnut pieces
1/4 cup light or fat free mayonnaise
1 TBS lemon juice

Combine mayonnaise and lemon juice.  Mix well with other ingredients.  Chill and serve on a bed of fresh baby greens.

Tomorrow I'm making pierogis from what remains of the left-over mashed potatoes, and turkey pot pies if I get around to it. The freezer shall be packed.

Candied Sweet Potato Pancakes (not exactly low cal)

1 cup leftover candied sweet potatoes, mashed well
1 egg
1 cup baking mix such as Bisquick Heart Healthy
1/4 cup milk

Mix well to form a smooth pancake batter.  If too thick add milk, 1 tablespoon at a time. 

Pour by 1/4 cupfuls onto a hot pancake griddle.  Allow one side to brown and bubbles rise to the surface before turning.

No syrup needed!

I add a ton of black pepper, and I just about double the chopped onion. After assembly, I freeze them on cookie sheets and then store in ziploc bags. To cook, I boil them until they float (about 4 minutes), then brown in a frying pan with a touch of oil.

I'm also planning to put a little cheddar cheese into the potato ones this time, just to try something new.

Those pancakes look good too. I might have to try them with my leftover butternut squash.

I'm making a turkey noodle soup in the crock pot as we speak (carrots, celery, onion, egg noodles, turkey and chk stock)!  

I still have 3 more bags in the freezer.  I'm thinking of making my turkey casserole but I have to be really careful with the portions on that!  I just take elbow macaroni, cooked.. mix in 2 cans reduced fat cream of chicken soup, some milk, turkey (cubed) and jack/cheddar cheese... mmmmmm

Any other ideas? Maybe a turkey pot pie.

I made turkey pot pie tonight.  i put in my recipe so i could see the calories and fat ahead of time.  it wasn't too bad 255 calories and 12.7 grams of fat.  I had a salad and fat free dressing so as not to add anymore fat to my meal.  It must have been good my non-dieting husband had two peices.

If you still have some leftovers, go to Kraft Foods and print recipe for "creamy corn turkey soup".   It was delicious and filling.

The turkey and gravy is all gone and the last of the stuffing is cut in portions in the freezer.  Tonight it's fish and tomorrow it's back to chicken, then a vegetarian day. 

So long until the Christmas leftovers!  Cool

LOL - then i'll be trying to figure out what to do with leftover ham.

I cooked my own turkey (even though I was alone), made the stuffing and cranberry sauce, and packed up nine frozen dinners--weighing the turkey meat to get exact oz. I skipped gravy because of the fat...I also sliced the breast meat and packaged in 3 oz baggies which I froze for turkey sandwiches. I eat 2-3 turkey meals and 1-2 sandwiches a week. I just love turkey!

I still had leftover stuffing and meat, so I combined that with the dripping, and called it a thick turkey soup which I ate for lunches.

I also have about 2 quarts of turkey stock, and I plan to make a big soup with that--later. I won't be cooking for Christmas, except maybe a ham since I have a coupon. And sweet potatoes with apples because I love them so!

I love food!!

 

I love turkey also! Although I was too lazy to cook the whole thing. So I just bought turkey breasts in Albertsons. I went through two, and still have three frozen in my fridge. I am debating whether to buy one or two more.
