I have been trying to gain for only about 5 days...and I am sick of it already. I just want to complain a bit.
Normally, I love to eat. I love food...breakfast is my favourite part of the day... But since I've been trying to gain, it's like a chore. And on top of that I feel gross and bloated. ...and fat (though I know I'm not).
I'm tired of trying to eat only stuff that is super nutritious and calorie-dense. I miss eating whole meals of vegetables.
I need to eat at least 500 more calories today to meet my goal, but I don't feel like it. I just want to give up and go to bed.
Okay, enough of my rant.

I'm sure things will look better in the morning. 'Whole meals of vegetables' have presumably been a big part of why you're unwell and underweight so try not to miss them too much - they were killing you. Some overweight person trying to lose weight would probably say they miss being able to eat whole 15" pizzas and tubs of ice-cream .... but their poor eating habits were killing them as well.
Make what you eat enjoyable, tasty and varied rather than simply 'super nutritious and calorie-dense' and it'll be much less of a chore
I agree with Gi-Jane and cannot stress the truth of her words in that "whole meals of vegetables" were likely one of the key reasons you were getting so underweight and ill. Someone can eat 1000 calories of intake in broccoli and be malnourished even if broccoli is rich in nutrients because there is no variety, just as much someone eating 1000 calories in chocolate would be malnourished even if there may be some nutritional value within it.
As for your making calories, impliment more high calorie low density food into your diet. Oils, nuts, nut butter, seeds, dried fruit and denser fruit like bananas and avocados, granola, honey, jam, mayonnaise (whole fat!) and whole fat dairy... put things like this in and you're suddenly going to have a lot less trouble. The bloating is also usual as if you have been undereating your stomach will need time to adjust. Try peppermint, ginger, liquorice and fennel as aids, whether as teas or in your food. Warm towels or compresses on your stomach will also help, as will short, slow walks to encourage digestion. Key word is slow, as too quick and you might end up with heartburn.
If you miss whole meals of vegetables, a few suggestions for you:
Vegetable tagine with toasted almond couscous
Fragrant vegetable & cashew biryani
Beet, spinach & goat's cheese couscous
Pasta with broccoli, chilli & pine nuts
Remember that a "whole meal of vegetables" needn't be a plateful of steamed greens.

As that overweight person, I would like to say that I actually miss mexican buffets and cookies... oh the cookies... ^_^
If you seriously would like to eat a whole veggie meal, throw in proteins and whatnot as a side dish, like most people do the veggie sides.
While it's not really health-efficient, until you get used to your new diet of calorie-dense food, I would throw in some junk food... Not a lot of it, but empty calories are still calories, so if you eat a piece of cake that's a good amount of calories burned that you don't have to fill with other stuff. Don't get hooked on it, though, or you'll end up missing mexican buffets and cookies too... Mmm Cookies...

I encourage doing this in any diet whether losing, gaining, or maintaining. It's more healthy than you might think. After all, a balanced diet means having a balance of the healthy and the fun, or "junk".
