Simple Fish soup (no stock)

Recipe Ingredients for TL's Fish Soup

9 medium whole (2-3/5" dia) Tomatoes, Red, Ripe
4 tbsp Olive Oil
1 large Onions
6 clove Garlic
4 stalk, large (11"-12" long) Celery
3 carrot (7-1/2") Carrots
2 tsp Kosher Salt
4 fillet Cod, Atlantic
3 large Onions, Spring Or Scallions
42 oz Water
8 potatoes New Potatoes

Recipe Directions for TL's Fish Soup

  1. 1. Chop garlic, onions, 2 stalk celery, and 1 carrot.

  2. 2. Blanche tomatoes, and peel skin. Chop into large chunks - save as much juice as possible

  3. 3. Chop fish into large chunks (frozen or fresh)

  4. 4. Saute above ingredients in olive oil until soft, add a few pnches of salt

  5. 5. Add tomoatoes and juice

  6. 6. Add fish

  7. 7. Add water

  8. 8. dice remaining vegetable and potatoes into small pieces and add to soup

  9. 9. Bring to boil, then reduce to simmer

  10. 10 Simmer about 30 min
