To add some variety to a handful of almonds (or other nuts) for a snack or salad, toast them the easy way...in the microwave.

Put nuts in a microwave safe bowl.  Cook on high for two minutes.  Stir.  Continue to cook on high for two more minutes.  Add seasoning if you wish--garlic and pepper for savory nuts or cinnamon and a little artificial sweetener for sweet ones.

Stir and let cool.  Nuts will continue to cook for another minute or two so do not microwave too much or they'll burn.

Great on a spinach salad with sliced onions, dried cranberries, and a dash of balsamic vinegar and olive oil!
