I'm looking to buy a toaster oven soon because its become waaaaay too hot to use a stove or oven, and frankly after using my boyfriend's toaster oven, I just love the way it cooks food! :-D
So what I'm wondering is, what are some good toaster oven recipes for common dishes like veggies with chicken or fish?

Anything you'd bake in a regular oven is good for a toaster oven. It really depends on how big it is. I find it great for baked potatoes, and I often make foil packets of fish with seasonings to bake. At 350 f, a 1/2" thick piece of fish (or chicken breast), wrapped in foil with a lemon slice, salt and pepper, takes about 15 to 20 minutes. Don't wrap too tight because you'll want to open the packet and test for doneness.
I will admit I rarely use my oven for meat - but toaster oven pizzas are one of my favs!
ww english muffin with tomato sauce, sprinkle of cheese, mushrooms, gr peppers (whatever your fav toppings are) and maybe a touch of meat - pepperoni is ideal, or sometimes hotdog slices if I'm desperate for meat.
Of course you could also substitute bbq sauce and pre-cooked chicken - also lovely!
I also like open faced tuna melt sandwiches done in a toaster oven.

I think I just use my toaster oven for melting cheese...
I agree with clairelaine though - foil packets are the way to go. Look up foil packet recipes and you'll find some great toaster oven options.
I used to use my toaster oven for just about anything that would fit in it. Lately, though, I noticed that the heat seems to radiate more from it than my oven, so I'm not sure about the energy balance, there, especially during the summer. I can even see the light through the seams.
For the toaster oven, you make the same recipes that you would for a regular oven. Casseroles are good, you just have to cover them with foil so the top doesn't burn, since it is so close to the element. I even use it to bake half loaves of things like banana bread, but I really prefer the oven because, again, the element is so close.
Nachos, pizzas, meats - they do really well.

1. cut an apple into slices. sprinkle with spices to taste (cinnamon, splenda, sugar, nutmeg, etc). You can put it on aluminum foil, just to be safe, and cook it in the toaster oven
2. Take 1/2 an english muffin or mini bagel. Spread with a bit of tomato sauce, and sprinkle with cheese. If you like, add toppings (pineapple, etc). Toast away.
In general, it's good for melting cheese in sandwiches or other things. Its good for cooking small things when you don't want to use your oven. But be careful if yours has the broiling setting: when I did that in mine the food caught fire =\

4) grilled zucini ( coat zucini in salt pepper pepricka cumin and cornstarch rub add MSG if you like or some chilli powder) all ways add a pinch of sugar so the rub sticks in the heat put in the toaster at 400 till you smell it cooking for a while
5) Baked garlic cut off garlic tops put them on the baking pan and pour on olive oil and bake at 400 till burnt squeeze out cloves for a great spread
6) you can broil any thing in a single serving in a toaster for example london broil take your rub rub your meat and let it sit 30 min set the toaster to broil put it in and do 5 min a side
7) baked stuffed tommatoes
8) tomato pesto mozzerella sandwiches
