This is a tasty alternative for vegans or non-ovo vegetarians. Play around with it to get the flavor you like.
| 8 | slice whole-wheat bread |
| 2 | cup firm tofu |
| 2 | tbsp diced white onion |
| 2 | tbsp dijon mustard |
| 2 | tbsp capers |
| 1 | tsp salt |
| 1 | tsp ground pepper |
| 3 | tbsp pickle relish |
| 1 | small tomato |
| 1/4 | cup of lettuce |
| 1/2 | tsp Curry powder |
Prepare this the way you would egg salad. Just remember to squeeze your tofu until the consistancy is dry and crumbly. Also, I prefer to toast my bread.
