Any tips for cooking with it? I've never cooked with it & hubby is super picky. I was thinking about dicing it & mixing with some meat for potstickers.

Tofu si bland and will tke on any flavor that you give it... My hubby is real picky. I make a tamali pie and take v-8 juice and tofu and put it in the blender and then make the receipie as usual.
another thing that I do is: braise the tofu in what ever flavor that you want toi give it. I take soy sauce and water and simmer cubed tofu untill all the fluid is absorbed. then the tofu has FLAVOR. Or season the tofu with a tex/mex flavor and do the samething with a spicy tomato sauce and the tofe will adopt the tomato flavor. Dont just add cubed tofu to a dish... it will be blah!
experiment with a lot of flavors... indian flavor/curry...etc

Thanks! I was thinking about marinating in Worchestershire & mixing with the regular meat for meatloaf. Same with tacos. It's more to stretch my $ on the meat but the calories help!!
I've gradually reduced the ground beef in most of my recipes. I don't even buy regular g. beef, I have the butcher grind the London Broil cuts or the top round if on sale. It's way leaner & hardly any grease! Then I'll mix 70% g.turkey w/ 30% beef. It's funny, if he sees that it's turkey, he'll complain but if I mix it before he comes home, he'll eat it fine!

I put it in lasagna and use that instead of ricotta cheese!!! It's REALLY good and fools people easily. ;) Use extra seasoning, of course. If you're not ready to go 100% tofu, do 50% ricotta, 50% tofu, and then top it off with mozzarella. Yay.

I marinate it (soy, garlic, ginger and sweetener is good) and grill slices on electric grill. I also put tons os piced up sliced zucchini, mushrooms, eggplant on grill at the same time.
Watch for calories in tofu. It is not as low as many people think. But with the above combination, you don't need any starch with it like rice, bread etc. Secret is to make LOTS of veggies.

Marinate it beforehand and it will taste like whatever you want it to. Also, if hubby doesn't like the texture of the firm tofu, try medium-firm, which many people find more appealing. Bear in mind that when I first became vegetarian, I HATED tofu, but after eating it lo these many months, I actually enjoy its taste and texture now. Our tastes change depending on what we eat!
I am an asian and we do eat a lot of it at home. Altho there are several ways to cook tofu, the most simple way is to either boil it in hot water or fry the thin sliced tofu with olive oil. And then you can dip them(bite size) in special soy sauce (made with good quality Jap soy sauce, little rice venigar or apple venigar and finely chopped scallion.) BTW, you will probably want to use hard types of tofu as silky ones tend to break easily. Once you fry with olive oil, you can hardly taste that "funny tofu taste".
Well, I mixed in the tofu with my meatloaf yesterday. As I figured, nobody noticed. lol
I think in the future though, I won't use the firm one. It broke up but not enough. I lied & told everyone it was the oats. :O But everyone ate it up! I liked it, I mean it blended in with the other tastes very well!! This will definitely be part of any ground meat dish I make in the future!
