Tofu question
Does anyone know if tofu can be frozen and successfully defrosted? I always end up throwing away half the package because I let it sit in the fridge until it's gone bad. Also how long can tofu sit in the fridge after you've opened it?
Yes, but I thin it alters the texture.

haha i do that same thing with my tofu, i open it, eat half the pack and then put it in the fridge and don't get back to it until like the next week or so. buttt, i'm pretty sure it's fine for a long while, as long as you have it in a baggy. =]
Tofu is great if you freeze it. I have a couple of recipes that I only use frozen Tofu , after it's been frozen, thaw it out and press it with your hands kind of like squeezing out a sponge, then cook it up.It has more of a meat texture.
You can keep tofu in the fridge for a fairly long time (at least a week, maybe 10 days) as long as you keep it submerged in fresh water and change the water every other day or so. Jadedonkkkey is totally right about freezing it - it changes the texture, but for the better!
if you freeze tofu and then dethaw and drain it then it will have a 'meatier' texture, or so i am told. i have never tried it.

Thank for the info! I've been reluctant to try freezing it but I end up leaving it inthe fridge for way too long and then am too scared to eat it. One container has like 5 servings in it, so for a single person, you have to really like tofu or waste half the package!
And I didn't know the water should be changed. I guess I thought the water in came in had some special qualiy or something. Makes much more sense to change it for fresh!
I find that extra-firm tofu is "meatier" than the medium that I use for most things, because the extra-firm has quite a few more calories due to being more dense. I wonder if the defrosted tofu has a meatier texture due to loss of water content, and is therefore higher in calories? Hmm.
I will freeze the current open pack and experiment :)
