Simple salad of tomato, spinach and feta.
| 1 | large tomato |
| 1/4 | tsp salt |
| 1/4 | tsp pepper |
| 1 | cup spinach leaves |
| 1 | tbsp mint |
| 1 | ounce feta cheese |
| 2 | tbsp scallions |
| 2 | tsp olive oil |
| 2 | tsp lime juice |
- Cut tomato into wedges and sprinkle with salt and pepper.
- Mix herbs with spinach.
- Place feta in center and plate and arrange tomato around it. Sprinkle with scallions
- Mix oil and lime juice and drizzle over tomatoes.
