Tomato-Olive Compote Recipe

Ingredients
1 tbsp olive oil
1 medium onion
14 1/2 oz tomatoes, diced
1/2 cup olives, pitted
2 tbsp capers
Directions
  1. Heat 1 tablespoon oil in a large skillet over medium heat.

  2. Add onion and garlic; season with salt and pepper.

  3. Cook, stirring occasionally, until onion begins to soften, 5 to 7 minutes.

  4. Add tomatoes and their juice, olives, and capers; cook, stirring occasionally, until slightly thickened, 3 to 5 minutes.
