Tonight's "This is what I have on hand, what can I do with it" Dinner Challenge!
Hiya! I am feeling as though I don't want to stand at the stove cooking tonight..... so would like to toss ingredients in a glass dish and bake something in the oven. I have on hand:
I cannot WAIT to get married! My fiance is very good at the rummage through the kitchen, create a dish dinner thing; I .... am not! Please help! Thanks!
- .75 pounds of chicken breast (tenderloins)
- canned tomatoes, tomato paste, and tomato sauce
- canned beans of various kinds
- various cheeses (provolone, chevre, Glouchester, cheddar, Swiss, 2% cheddar, parmesan...)
- almost every spice and herb known to man (or at least sold at Zabar's)
- chicken broth
- asparagus
- about half an onion
- lots of garlic cloves
- a couple of small potatoes
- canned corn
- pumpkin (canned)
- sliced mushrooms
- one fresh red pepper
- various rices and pastas, etc. (arborio, brown, basmati, biryani, penne, spaghetti, barley, cous cous...)

You have a ton of stuff!!
One thing you could do:
spice up the chicken breasts
pour the tomato sauce over it
sprinkle cheddar and swiss over the top
pop in the oven...
Another thing:
chop up chicken, throw in a pan with a little olive oil, spices, garlic
add in asparagus and corn and mushrooms
toss over rice
Another:
cook up come cous cous with chicken broth
toss in a pan with chicken and tomato soup
good luck!

The pepper makes me think you could make an interesting hungarian goulash thickened with the pumpkin.
1. First pan sear the chicken and put aside.
2. Saute onion and mushrooms for a few minutes, then add lots of minced garlic and the tomatoes and tomato paste.
3. Add a can of chicken broth and add the chicken back in.
4. Add chopped potato, chopped red pepper, canned corn (not traditional but so what), about a teaspoon of salt, and a healthy palmful (3 tbsp?) of paprika and a little touch of nutmeg.
5. Let this stew for 30 minutes or until the potatoes are soft.
6. Now take about 1/2 cup of the pumpkin and add a little lowfat milk or half and half to get it creamy. Pour it into the stew until the sauce becomes nice and smooth and rich looking.
7. taste it again and add salt and pepper as desired
Serve this over some egg noodles with a side of steamed asparagus.
I have no idea how the pumpkin part will taste by the way...I'm just improvising on your ingredients. But I would certainly give it a shot!

I love pumpkin, and nearly always have a couple of cans of it in my cupboard. Yesterday's pumpkin-y indulgences were pumpkin butter and pumpkin ice cream! :-)

you could do a quick chicken caccitore. slice up the onion, pepper, mushrooms, and garlic, soften in a pan, then add the canned tomatos and some italian seasonings. sear the chicken quickly in another pan with some italian seasoning, then put it in the tomato sauce to finish cooking. boil the potatos and use chicken broth to create mashed potatos, and you should have a quick, healthy dinner with tons of veggies in it.
Quesadillas.......put all your favorites in it. :)
