tons of sodium in this recipe ... how to cut it back?

would love to make this recipe but i put this recipe in the recipe analysis thing and for 1 serving it has over 2,054 mg of sodium.  how can i lower the sodium content per serving?  i am trying to watch my sodium intake.

  • 2 packages Ramen noodles
  • 1/2 cup dried mushrooms, chopped
  • 20 large raw shrimp, peeled and deveined
  • 1/2 cup finely chopped onion
  • 1/2 cup sliced scallions
  • 1/2 teaspoon red pepper flakes
  • 1/2 teaspoon kosher salt
  • 1 quart vegetable broth
  • 1/2 cup mirin
  • 1/4 cup soy sauce
  • 4 teaspoons sesame oil
  • Special equipment: 4 (18-inch) squares aluminum foil 

The first thing you can do is cut out the kosher salt completely, I tend not to add any extra salt if it isn't necessary. You can also use low sodium vegetable broth and low sodium soy sauce. I don't really  notice a difference between the low sodium and regular.

I hope this helps! Its good to cut sodium out of your diet for your heart and because it makes your body retain water which can make you look bloated. Good luck cooking :)
