Tortilla meal ideas?? Suggestions needed :)

What low calorie/low fat meals can you make with a tortilla?  I always make a tortilla pizza (with 2% cheese) or wrap egg beaters in a tortilla---but this is getting VERY old.

Anyone have some creative ideas!?!

My Wednesday 1st Dinner (I sort of have two dinners, because I have a lab from 6-9 and my schedule is all messed up) last week and this week is/was a tortilla with refriend beans.  I put half a cup on, and fold it over like a quesadilla, then pop it in teh toaster oven.  It gets all crispy and delicious.  :) I also put steamed broccoli in it.  I guess I'm weird like that.

My husband made me the best dinner last night.  He stirred together a can of corn, a can of black beans and some salsa, then cooked some chicken breast and cut it into slices.  He mixed it all together and stuffed it in a pita - although a tortilla would work just as well - with some melted cheese on top.  It was so good, like the southwest eggrolls from Chili's.

I'm making a veggie wrap for dinner tonight:

1 wheat tortilla (120 calories, but I think you can find healthier ones)

1/2 to 1 cup of baby spinach (I like mine to spill out!)

4 of 5 leaves of fresh basil, I LOVE BASIL.

1/4 cup of shredded carrots

a sprinkle of red onions (sometimes I don't include these, just depends)

then I take a small zucchini ( I think they are actually called squash or something, but they look like mini zucchinis) and slice it into long strips, rub a little extra virgin olive oil on the strips, pepper them, and then grill them on my foreman for a few minutes! No need to peel or anything.

then, for added flavor I take a wedge of lite laughing cow garlic and herb cheese (like 35 calories, I think) and around 2 tbsps of sundried tomato hummus (mine's homemade, around 40 calories) and spread that down on the tortilla.

After I have the hummus and cheese down, I layer the spinach, then the basil, then the carrots and onions, then top it with the warm grilled zucchini. It's very tasty and good for you! Because I over fill mine, it usually ends up more like a salad on my plate, but oh well.

Tonight we sauted chicken breast pieces with yellow peppers, mushrooms, and spices. It was really good wrapped up in a tortilla with a little bit of salsa.

Tortilla chips - cut and bake them

You can sprinkle cinnamon and sugar on them and a bit of butter spray and bake for dessert chips. Two go GREAT with a scoop of ice-cream, like a wafer

You can use them instead of layers for lasagna (round layers...)

Breakfast - PBJ wraps, banana wraps (toasted) mmm.

I like bean pie with tortilla "crust."

Take a can of healthy refried beans (helps it hold together) and mix in whatever Mexican-type things you like. I usually use corn, some peppers (usually jalapeno or chili peppers, but bell would work too), black beans, kidney beans, and lots of spices. Put one tortilla in the bottom of a pie plate, fill with all the filling, then put another one on top. I'd cover it with foil so it doesn't burn, or it would be really good topped with enchilada sauce too. Bake at 350 for 20 minutes or so until warm. Slice and top with your favorite salsa, and cheese if you like. So good!

My brother makes "taco lasagna" take your traditional meat and spices, add in a can of tomatoes and some chopped peppers to make the filling.. then layer one tortilla, sauce, cheese,tortilla, sauce, cheese.. really good.

for a quick lunch i do 1 tortilla (usually 81-110 cals), a couple slices of turkey (4-5=40-50 cals), a little bit of fat free shredded mozzarella (22 cals), and add some cold tomato or marinara sauce (about 15 cals). great meal and tastes really good

another one i do is 1 totilla (81-110 cals), a couple slices of turkey (4-5=40-50 cals), some cottage cheese (about 40 cals) and a handful of shredded iceberg lettuce (5 cals). also delicious.

both of these are really low calorie so usually it's more of a snack or i make it with something else as a meal.

here's one more i found somewhere.. 1 tortilla, 1 tbsp peanut butter, 1 medium banana, 1 tsp maple syrup or honey, 1 tbsp crunchy, high fiber cereal (i like FiberOne or Grape Nuts)


hope this helps, i'm pretty picky and don't eat a lot of stuff so these are really quick and easy!

2 tbsp PB2
1/2 medium banana, mashed
1 large la tortilla factory tortilla
(total cal 188)

mix pb2 and banana and put it in the tortilla, fold it like a quesedilla and cook in a skillet till its toasty.

1 tbsp tofutti cream cheese (or low fat cream cheese)
1 slice red onion, chopped
1 stalk chopped celery
several slices cucumber, halved
two leaves lettuce
1 large la tortilla factory tortilla
(total cal about 150)

spread cream cheese on tortilla, layer on lettuce and throw in the rest of the veggies, then wrap up.

 

For a snack I'll take a tortilla and spread it with cream cheese & pumpkin butter or peanut butter and a drizzle of honey.

You can make a mini taco salad if you bake it in the oven, draped over a small round baking dish.

I really like this site for recipe ideas. it's flat out wraps but, you get the idea pretty much same thing different shape that's all. The recipes are pretty basic and you can use your imagination and go farther with them. I was so happy to find that you could make sandwich wraps into pizzas. I'm totally alienated on pizza nights otherwise.

Thanks for all the great ideas guys!!  There are definitely some excellent choices (I probably should've mentioned that I hate beans...but other than that, I'm game).  So many choices!!!  I REALLY appreciate the help Laughing
