Recipe Ingredients for Tortilla Pie from LowCalDiner.com

1/2 pound Ground Beef, lean
1/4 cup Onion, chopped
1 Garlic Clove, minced
14 1/2 oz diced Tomatoes (Canned, Italian or Mexican)
1/2 teaspoon Chili Powder
1/4 teaspoon Ground Cumin
3/4 cup Ricotta Cheese (Part Skim)
1/4 cup Mozzarella, Part Skim Milk Cheese (shredded)
3 tablespoons Fresh Cilantro, minced & chopped
4 Flour Tortillas
1/2 cup Cheddar Cheese (Reduced Fat, Shredded)

Recipe Directions for Tortilla Pie from LowCalDiner.com

  1. In a non-stick pan cook the ground beef and the next 2 ingredients. Drain.

  2. Stir in tomatoes and next 2 ingredients.

  3. Bring to a boil and then remove from heat.

  4. In a bowl combine the ricotta and mozzarella cheese and 2 tablespoons cilantro.

  5. Place 1 tortilla in a 9" round cake pan coated with cooking spray.

  6. Layer with 1/2 the meat sauce then 1 tortilla.

  7. Add all the ricotta mixture on top another tortilla and the remaining meat sauce.

  8. Top with the last tortilla.

  9. Sprinkle with the cheese and the remaining cilantro.

  10. Cover and bake at 400° for 15 minutes.

  11. SERVING SIZE= 1/6 of Pie
