Tropical Vanilla Pudding w/ Coconut Cream
Coconut Cream
1/2 cup Heavy Whipping Cream
2 tbs. Lite Coconut Milk
1 tbs. Sugar
1 tsp. Vanilla
Blend ingredients, and whip until thickened. I use a Magic Bullet. The Coconut Milk will make whipping the cream take longer than usual, so check often. If too watery, add more Heavy Cream.
Tropical Vanilla Pudding
1 package Jell-O Instant Vanilla Pudding (can use sugar-free, fat free, or whatever you like)
3 cups Skim Milk
Beat ingredients together till pudding thickens (2 mins), then let set for 5 minutes (follow instructions on the package).
Toppings (optional -or- choose what you like)
*Banana
*Shredded Coconut
*Chocolate Chips
Strawberries (optional)
Put the pudding in a dessert dish, throw on a dollop of coconut cream, pile on the toppings, and enjoy!
This dessert is low in calories, but has some fat because of the cream. Keep to 2 tbs. of cream and you should be fine!
