Trying to add eggs to my diet
So, I'm trying to add eggs to my diet. I really only like them scrambled. I find it interesting that one egg raw has 75-ish calories... and one egg scrambled has 102. Is this because of somethinn it's cooked in? Why would the calories in the egg go up when you cook it unless you add something? That said, if I use a no calorie non stick spray in the pan instead of oil or butter, it would be the same calories as the raw egg right? How would you handle the tracking of a scrambled egg?

I actually had a question about eggs myself.....
I pack my breakfast and dinner foods to take to work the night before as I don't have time in a morning to prepare or eat breakfast. At the moment, breakfast is an Alpen Light bar (79 cals) which is obviously processed, sugary and leaves me gagging for my mid morning banana. I was wondering if I could make up a portion of scrambled egg with mushroom or something the night before and tub it up. Would it be ok to reheat the next morning for my breakfast?
*Can I also point out that I only ever buy Free Range Eggs*

Egg ideas:
breakfast burrito: eggs (i only use whites or egg beaters) scrambed with mushrooms, tomatoes, onions, peppers, maybe spinach, maybe salsa if you like, wrapped in a tortilla with laughing cow
egg drop soup: low sodium chicken broth, drop a raw scrambled egg in there while stirring. filling, really low-calorie and yummmm
tortilla espanola: boiled potatoes sliced thin sauteed with onions in as little oil as possible (still need some so it doesn't stick)...then add lots of eggs scrambled and cook covered over low heat until it's set; flip and cook it without breaking!. it's really really good chilled too on bread or by itself.
hard boiled, poached over tomatoes and spinach, frittatas, omelets, sunny side-up with some lean back bacon for a high protein meal, egg sandwiches, sooo many breakfast ideas. crustless quiches, hmm, i love eggs...
But can you reheat eggs as I don't have time to prepare in the mornings?
You can. I found a recipe for egg cups, basically little mini quiches made in a muffin pan. I've made a dozen of them and then used them as quick reheatable breakfasts. The texture may change a little, depending on what you put in them and how they were stored, but if you keep them well sealed it's pretty minimal.

Egg drop soup is really yummy. You take some chicken broth, add some vegetables (whatever you like, I just used frozen mixed vegetables), heat it to a boil, then slowly pour a scrambled raw egg in. Let it cook for a minute. Season with soy sauce if desired.
Also, fried rice. You scramble an egg, then add cooked rice, some veggies (again, I use frozen mixed vegetables with some thinly sliced onion), and season with soy sauce.
These are staples in my house.

Reheated eggs can get kinda runny, if they're scrambled. Eggs contain a LOT of moisture, so I think it depends on how you reheat them. I once successfully reheated an mushroom/onion/egg/cheddar scramble in the oven, at 350 for about 10 minutes. It was tasty, but I don't know if its possible to do that at work. You could try making a tamagoyaki, which is like, a Japanese egg omlette.

Not really answering the question, but worth suggesting: tarragon is *amazing* in scrambled eggs. Yum! For dinner last night, I scrambled up two eggs, 1/4 cup egg whites (trying to use up a box I bought for making meringues) and a healthy sprinkle of tarragon - then stuffed it into a whole wheat pita with a light sprinkle (about half an ounce) of grated sharp cheddar.

What I do is actually not to use the database entry. Instead I make my eggs with 1 tsp oil in a nonstick pan, add an oz of milk, a little salt and pepper, a tbsp of shredded cheese, and then use the recipe analyser. It works for me because I vary my recipe from time to time- sometimes no cheese, sometimes 2 tbsp chopped onions, sometimes I add veggies like spinach.
Also, I usually make my scrambles with 1 egg and 2-3 egg whites instead of 2 eggs. Lower calorie, higher protein and lots of yum!
Just wanted to say I made a thee egg omelet with sauteed mushrooms in the middle for breakfast today. That's three whole eggs, none of that egg white nonsense.
It was delicious!
