Trying one entire week of Vegetarian meals...
I can, of course, start searching for various meals etc - however wonder if anyone has already put substantial work into preparing vegetarian meal plans?
I'll manage for a day or two, but after that I'm going to get bored!
Tomorrow, I'll do:
- Fiber One w/ blueberries and soymilk for breakfast
- Hummus and Pita chips for a snack
- Spinach Salad w/ corn, tomatoes, beans, and nuts w/ a bit of homemade balsamic vinaigrette
- fruit or carrot sticks for another snack
- Veg Quesadilla for dinner w/ portabello mushrooms, tomatoes, zucchini, peppers, onions, etc and 1/4 cup shredded cheese
Breakfast today was.... Spicy Frittata... made with plenty of vegetables. Other days I'll eat porridge oats, muesli, cereals or poached eggs on toast. Yesterday's supper was a chunky Vegetable Chilli served with some brown basmati rice. Great way to use up left-over vegetables. I like making soups such as Celery and Potato, or Carrot and Coriander. Served with some crusty wholegrain bread. Other lunches would be Fruity Rice Salad or Pasta Salad with Broccoli and Almonds. Wholemeal pittas with various fillings.... egg mayo and leaf spinach, hummus & cucumber, cottage cheese and tomato..... Stuffed Peppers make a delicious supper. And pasta is really versatile and quick to cook and serve with a simple, fresh tomato sauce and some parmesan or dollied up with some mushrooms etc. I love Pasta Fagioli, for example with cannellini beans.
