Makes 10 servings

Upma is basically a south Indian snack, this recipe has been modified to suit my special dietary needs

Ingredients
1 cup semolina
2 medium onions, diced
1 teaspoon oil
2 1/2 g salt
1 teaspoon mustard seeds
3 cups water
1/2 oz chillies,
1 teaspoon ginger,
1 tablespoon Beans, Black, Mature Seeds raw
Directions
  1. Dry roast the semolina

  2. Heat the oil in a non-stick wok, add the mustard seeds and black bean seeds.

  3. Add the diced onions and saute till they start browning.

  4. Add the semolina, chillies, ginger and salt, mix well.

  5. Add hot water, stirring all the while

  6. Cook on medium to low heat till it dries up and the semolina is cooked.

  7. It tastes much better with the traditional recipe, this one is to suit me because of my health.
