Tuna Burgers
I wanted tuna tonight, but I wasn't happy with just a regular old tuna sandwich, so I tried my hand at fish burgers, and these turned out incredibly well (and my roommate seems to agree).
2 cans (240 grams) flaked white albacore tuna
2 eggs, beaten
12 saltine crackers OR 1/4 cup of bread crumbs
1/2 chopped onion (more or less to taste)
1 cup chopped spinach
1/2 cup bean sprouts
2 tbsp mayonnaise
2 tsp lemon juice
Salt and pepper to taste
tabasco sauce (optional)
Mixture should stick together when pressed; place onto sprayed baking sheet, bake at 350 for 25 minutes, flipping once halfway through; makes four servings. 310 calories each with 22.8 grams of protein, 18% vitamin A, 19% vitamin C, 5% calcium, and 16% iron.
