Tuna Pasta Salad with Grilled/Griddled Vegetables Recipe

Makes 1 serving


A fresh-tasting salad

Ingredients
3 oz tuna, canned in oil and drained
2 1/2 oz penne
2 tablespoons chopped tomatoes
4 black olives, sliced
1 tsp olive oil
1/2 red pepper, sliced
1/2 courgette, sliced
1 cooking spray
1 basil (or italian herbs)
1 black pepper
1 salad leaves
Directions
  1. Cook the pasta according to the packet instructions

  2. Place the red pepper and courgette slices on a grill tray, spray with a little cooking spray and place under a hot grill until they start to blacken a little at the edges.

  3. (Or you can heat a griddle pan, spray it with cooking spray and cook the vegetables on a high heat so that they get blackened stripes.)

  4. Combine the grilled vegetables with the drained pasta, tuna and the rest of the ingredients

  5. Season well and serve with lots of salad leaves
