A fresh-tasting salad
| 3 | oz tuna, canned in oil and drained |
| 2 1/2 | oz penne |
| 2 | tablespoons chopped tomatoes |
| 4 | black olives, sliced |
| 1 | tsp olive oil |
| 1/2 | red pepper, sliced |
| 1/2 | courgette, sliced |
| 1 | cooking spray |
| 1 | basil (or italian herbs) |
| 1 | black pepper |
| 1 | salad leaves |
- Cook the pasta according to the packet instructions
- Place the red pepper and courgette slices on a grill tray, spray with a little cooking spray and place under a hot grill until they start to blacken a little at the edges.
- (Or you can heat a griddle pan, spray it with cooking spray and cook the vegetables on a high heat so that they get blackened stripes.)
- Combine the grilled vegetables with the drained pasta, tuna and the rest of the ingredients
- Season well and serve with lots of salad leaves
