A simple, summery salad
| 1 1/2 | oz penne |
| 3 1/2 | oz tuna |
| 1 | tablespoon vinaigrette |
| 1/2 | yellow pepper, grilled and sliced |
| 1 | tablespoon basil leaves, torn |
| 2 | oz courgette, sliced and grilled |
| 1 | tomato, chopped |
| 3 | oz lettuce, shredded |
| 1 | oz beansprouts |
| 2 | teaspoons pumpkin seeds |
- Cook the pasta according to the packet instructions, drain and reserve
- Combine the cooked pasta, pepper, courgette, basil leaves and tuna with the vinaigrette
- Serve on a bed of shredded lettuce and chopped tomato
- Sprinkle over the beanshoots and pumpkin seeds
