Tuna Pasta Salad Recipe

Makes 1 serving


A simple, summery salad

Ingredients
1 1/2 oz penne
3 1/2 oz tuna
1 tablespoon vinaigrette
1/2 yellow pepper, grilled and sliced
1 tablespoon basil leaves, torn
2 oz courgette, sliced and grilled
1 tomato, chopped
3 oz lettuce, shredded
1 oz beansprouts
2 teaspoons pumpkin seeds
Directions
  1. Cook the pasta according to the packet instructions, drain and reserve

  2. Combine the cooked pasta, pepper, courgette, basil leaves and tuna with the vinaigrette

  3. Serve on a bed of shredded lettuce and chopped tomato

  4. Sprinkle over the beanshoots and pumpkin seeds
