Recipe Ingredients for Udon Noodle Soup

8 oz udon noodles
4 c chicken broth
1 tsp brown sugar
1 tsp ginger
2 tb soy sauce
3/4 c bean sprouts
3/4 c snow peas
3/4 c shitake mushrooms, sliced
3 c bok choy, sliced
2 tb cilantro, chopped

Recipe Directions for Udon Noodle Soup

  1. Cook noodles according to packet instructions and while the water is boiling fill a sauce pan with the chicken stock, brown sugar, ginger and soy sauce. When the noodles are don, drain them and divide among bowls.

  2. When the flavored stock boils, add the vegetables. They should be cooked in about 2 minutes. Ladle stock and vegetables into each bowl of noodles and sprinkle with cilantro.

  3. You can easily add other items, like chicken fish or tofu.
