So since weight training started last month Ive gained 15 lbs yay. !

Im eating around 2700 cals a day.
and just been lifting weight to bulk up and get the muscle I lost back.
That's pretty darn good!! You could stand to up your intake even a bit more. If you notice that your weight starts to plateau, then I would definitely have at least 3000 or more. I still eat that amount and I'm technically at a healthy weight of 133. I'm aiming for 135 which would put my BMI at 21. B)
