what can i use instead of oil?
help! i got a few zucchinni and i wanna make zucchini bread for my hubby. but i want to make it a little healthier.... so what can i use in place of oil? i dont want to use sweet and low or anything like that so what can i use instead of sugar? and if i use the wheat flour, do i use the same amount or less of it? thanks for any help you can give me....
If you use pureed fruit, like applesauce or banana, you should be able to cut the sugar by 1/3 without sacrificing too much sweetness.
PS: You can also replace the oil with pureed pumpkin (canned is fine)
I agree with the other posts about substituting sugar. You could also use agave syrup or pure maple syrup instead of sugar. They are lower on the glycemic index. I use half white whole wheat flour and half regular flour. That gives you more whole grain and fiber. Also you can add flaxmeal to the mixture (2 tablespoons) to add healthy fat and fiber. All these things you can get at Trader Joe's.
