I made homemade Ratatouille for supper with rice and garlic shrimp. When I plan ahead (especially for veggies) it works well for me. The Ratatouille was delicious, very flavorfull. Eggplant, fresh tomatoes, zucchini, red pepper, onion, garlic, basil..mmm good.

Sure! I used this recipe: http://dinner-recipes.suite101.com/article.cfm/ratatouille_r ecipe I did a few things differently: fresh tomatoes instead of canned,added a red pepper, used freeze dried basil, only used 1 zucchini. It is a very adaptable recipe. |
