Lunch today : Spicy ranchero egg white salad, grilled asparagus glazed with low fat veggie cream cheese (melted), a large asian pear. Oh my. I am in love.

Entry HAPPY FEBRUARY TO EVERYONE

  I am tired of being sick! (LOL)

Breakfast ... Fiber One cereal, unsweetened Chocolate Almond Breeze, Eggplant Hummus and a low carb Western Bagel Perfect 10 multigrain bagel.

Lunch ... potato chips, hummus and chicken. OK, OK, not my healthiest choice there, huh? Oh, and lots of sugar free strawberry jello.

Dinner ... multigrain pasta, Trader Joes sundried tomato chicken sausage, Spinach-Basil spaghetti sauce, and a huge pile o' broccoli.

What we accomplished today ...

  • decluttered the garage
  • filled bird feeders
  • swept the front walks
  • reseeded the lawn (front and black)
  • trimmed the olive tree
  • picked the grapefruit off the grapefruit tree
  • laundry (sheets)
  • did some house re-arranging and picking up
  • cooked dinner together
  • slept in
  • watched some of the Puppy Bowl on the Animal Planet Channel
  • called vet and made an appt tomorrow (Monday) for Emily the cat (she's lost a tooth!)

Entry I CAN SO RELATE TO THIS PICTURE ...

Don't you just love it when you see a funny picture that you can SO relate to? Well, I do. This one made me laugh. Anyway, this is Day #3 of being "back in the saddle" and I am -- once again -- eating my veggies like a good girl. Last night for dinner I had a mess o' fresh green beans (with melted fat free cheese on top ... gotta love those Kraft fat free singles), some cucumber, the last of the four bean salad, and an entire crunchy red pepper. Later that evening I had more cucumber and a nice pile of radishes. When it comes to eating healthy, you just can't beat fresh veggies, ya know?

Breakfast this morning was a bit of a shocker. Seems I accidentally bought unsweetened Chocolate Almond Breeze instead of my usual vanilla, and I didn't notice until I'd poured it all over my Fiber One cereal. Well, it was interesting, that's for sure. Thrfity me will finish the carton of it, but I must admit that I prefer the vanilla on my cereal -- but it was sort of a flashback to my Cocoa Puff days, I suppose. I also had a low carb bagel and some spicy hummus. Fiber One and a hummusy bagel is my basic breakfast ... very high fiber (39g) and about 350 calories. The nice thing is that it does leave me feeling satisfied until lunchtime, and it more than gets in my daily fiber in one fell swoop.

I'm thinking lunch today will be egg white salad, low fat cottage cheese, miscellaneous veggies, and a blueberry fiber cake. (Hey, more fiber!)

Dinner tonight will be chicken, a HUGE servings of greens (mustard greens, turnip greens, collard greens, spinach) and probably another veggie of some sort. Maybe some whole grain crackers. Maybe some Fritos. (I like Fritos because the ingredients are just corn, oil and salt ... pretty basic ... and they don't spike my blood sugar like some other starches.)  Snack after dinner will be egg whites, radishes, and some sort of protein ... maybe turkey or low fat cheese.  And I still have sugar free jello, too.

EEEEEEK! Note to self: looking online at your credit card balance after a vacation is almost as shocking as stepping on the scale after vacation. EEEEK! EEEEK! EEEEEK!

Yay for the day ... we've already got our State Income Tax refund. I used 2/3 of it to pay the second half of our property taxes, and put the other 1/3 toward my scary-high post-vacation credit card balance.

Entry CONFESSIONS AND TURTLES

First off, let me just confess right now .... I haven't been on a scale in 7 months and I haven't really been dieting. EEEEEK. Bad Molly! Bad Molly! Bad Molly! I am not even willing to say how much I've gained back ... let's just say "lots and lots." Oh my gosh, what in the world was I thinking? Ugh!!!! Oops. I'm so disappointed in myself. Sheesh, why does it take so long to lose weight, but regaining weight is so gosh-darned fast? AAAAUUUGGGHHHH!!!!! Anyway, I started again today and really would like to lose some weight before May (when we head to Ireland.)

Breakfast: Fiber One, Unsweetened Vanilla Almond Breeze, Low Carb bagel, hummus.

Lunch: tuna, lettuce, cucumbers, tomatoes, radishes, fake bacon bits, and a Blueberry Fiber Cake.  And I tossed in some 4 bean salad, too.

Dinner: roasted chicken, 4-bean salad, asparagus, squash, cucumber ... maybe some whole grain crackers and an apple.

On a cheerier note, we had a delightful time in Maui and I have a zillion pictures of all sorts of things. Let me know what you want to see pictures of, and I will post them in upcoming journal entries. In the meantime, can I just say that I'm in love with baby turtles?

Yay! Our taxes are at the accountant's!

This is the earliest we've ever been able to get our tax info together to get things prepared and filed -- but California Gov. Schwarzennegger gave us a HUGE incentive to move quickly ... the state is running out of money and they may be issuing IOUs instead of refund checks, eeeek! Anyway, looks like we can get things filed by Friday.

Entry We saved a doggy life today.

We got a call around lunchtime today, asking if we could pick up a Mexican Hairless from our local SPCA (CCSPCA), and transport him to Kettleman City -- where he's be picked up by a Hairless Rescue. (We made this same transport run a few weeks ago with another Mexican Hairless.) My wonderful DH took the afternoon off work to go with me. Here's the cute little guy ... He's already scheduled to be neutered and will be ready for his forever home after February 2. And here are some pretty scenic pictures I shot on the way back home, afterward. Even in January, central California is beautiful!
