Oh my gosh I made homemade baklava last night and it's to die for!!! Last night I met a few Relay friends for dinner and to show them my wedding and honeymoon pics and gab. They gave me my presents which were awesome and I'd been dying to use so yay! I had gone to the "fancy" grocery store since it was by the restaurant and found the fyllo pastry sheets I needed to make baklava (wasn't sure we'd have them down here but we did!). the recipe sounded easy so when I got home at 8pm I put away the groceries and gabbed with D and then around 8:45 I started to put it together. I'd never worked with the fyllo sheets before and while it wasn't hard, it was insanely labor intensive!! You lay down each sheet (probably 80 sheets total) and then paint with BUTTER, each sheet! So 80 layers (aka almost 3 sticks of melted butter) with sugar and walnuts and cinnamon in the middle. Then melt more sugar, water and honey together for the syrup sauce to dump over it when it comes out of the oven and you're in pure diabetic shock over the amazing sweetness! I actually like it cold better than hot so I snuck a piece this morning on my way out the door!
Tonight we might meet some of D's old co-workers at happy hour, he's undecided on if he wants to put pants on today :P I am defrosting chicken and veggies for chicken pot pie tonight, woot!
Tomorrow we head up to Annapolis for my second LASIK appt before my surgery in January. I have no idea what they are going to do besides check my eyes to make sure nothing's changed. One more appt in Dec and then off to surgery in Jan. I'm terrified! but I want it done and over with so might as well go through with it.
After that we're going to stop at the social security office and apply for my new card which will take about two weeks, blah. Then we're going to see if we can find this little authentic italian market that D went to once with co-workers and find cannoli shells beacuse I'm SO in the mood to see if I can make them! I also want to attempt the shells myself but I'll have the premade ones as a backup just in case mine don't turn out the first try!
Other than that not much planned for the weekend. Hopefully just laundry, cleaning the house and relaxing in front of the fire with D!
I'm sure you'll be thrilled with the lasik once it's over! My sister is :) I heart baklava too! I've only made it a couple of times because I will eat the ENTIRE pan myself if it's around. I cannot control myself at all. And homemade cannoli sound delish :) Are you flavoring the filling or going with the traditional one? Have fun at happy hour! |

I've missed you! Oh man I am glad to be back! Just so you know, my mom had lasik and it was nothing. It was over before she even knew they had started. Seriously. I really wish I had some of your baklava. Baklava is my favourite dessert in the whole world. Mmmmmm sounds so so so good! I was supposed to meet with committee members for Relay yesterday- I am the sponsor chair this year. But they all blew me off and didn't let me know they weren't coming. Lame! Oh well, LOL. So far I've raised....0$ cause "no one is interested" booo. |
