Forget the vanilla yogurt, use the black bean recipe, it's truly terrific! And I'm very careful in the oddball diet substitutions that I'm willing to eat.
You take a 15 oz can of black beans, drain and rinse them. Add a cup of water and puree the beans with the water either in a blender or a magic bullet type of thing or a cuisinart. Mix that into the no pudge mix and bake as per the recipe. I made them last night, the batter tasted just fine. I had one late just before going to bed. I had 3 this morning for breakfast and didn't feel guilty because they're black beans.
The stats are 67 calories, 113mg of sodium, 16.7g carbs, 1.4g dietary fiber, 11.1g sugar, 1.9g protein, 1% calcium, 2% iron.
I'm going to experiment with tofu and the white cake mixes and maybe white beans and pumpkin mix.
