These are filling- they'll keep me for 4 hours, and it is easy to substitute different fruits or nuts depending on what is on hand.

Recipe Ingredients for Vegan Banana Muffins

4 Bananas
1 cup Whole Wheat Flour
1 1/2 cup Enriched Unbleached White Flour
1/2 cup, unpacked Sugars, Brown
1 tsp, ground Cardamom
4 oz Raw Almonds
1 cup Raspberries
1/2 cup Vegetable Oil, Canola
1/2 tsp Cinnamon, Ground
1 1/2 tsp Baking Powder
1 tsp Baking Soda

Recipe Directions for Vegan Banana Muffins

  1. Mash the bananas well.

  2. Mix in everything except the fruit and nuts. It makes a dough, not a batter, so expect it to be super thick.

  3. Mix in nuts.

  4. Mix in fruit.

  5. Scoop into muffin tins with a 1/4 C measuring cup.

  6. Bake at 350 for ~20 minutes.
