Vegan dessert help

I am making desserts for a charity event next week and one of them needs to be vegan. Any idea? I need it to be small (one or two bites) and easily picked up. Thanks in advance!

Miniature vegan cupcakes (you could use a vegan baking mix if you don't feel confident), little vegan cookies, or you could even do a Reese-style PB cup. Just google recipes for vegan peanut butter cups - all you need is sugar, PB and dark chocolate - plus patty pans for setting the PB cups in :)

I have over 50 vegan desserts reciepes as my kids are vegan...Here is one of them..

 

Chocolate Cup Cakes

100g        ;   Soya Butter

1 cup           Sugar

1 teaspoon  Vanilla Essence

1 cup            Vegan Chocolate Powder

1/2 cup        Hot Water

1 cup            Soya Milk

1 teaspoon  Lemon Juice

2 cups        ;  Plain Flour

1 teaspoon  Bi-Carb Soda

       &nb sp;            Pinch of Salt

 

Cream the first 3 ingredients together. Mix Chocolate with the hot water to make a paste. Add to the cream mix, mix well, until smooth. Add the lemon to the milk and set aside. Sift flour and bi-carb soda and salt together. Mix all ingredients together, a bit at a time. Bake at a 180oC for 15-20mins...

Chewy Muesli Squares

makes 20

 

100g        ;       &n bsp;  Soya Butter

1 tablespoon    Honey

1 tablespoon    Malt Extract

1/2 teaspoon   Vanilla Essence

1/2 teaspoon   Bi-Carb Soda

65g               &nb sp;  Unsweetened Muesli

25g               &nb sp;  Oats

40g               &nb sp;  Desiccated Coconut

40g               &nb sp; Sesame Seeds

40g               &nb sp; Sultanas

1 tablespoon  Sugar

 

Melt butter together with the honey and the malt extract in a saucepan, then add the vanilla essence and bi-carb soda. Mix all the remaining ingredients in a bowl, pour in the melted mixture, and stir well. Put the mixture into a baking tin, 18cm square and bake in oven preheated to 350oF or 180oC for 30 mins. Just before they cool down cut into slices.

Banana Muffins

 

2       &n bsp;        ;        Bananas, Mashed

1 tablespoon    Honey

1/2 cup              Oil

1 1/2 cup           Plain Flour, sifted

1 teaspoon       Baking Powder

1/2 teaspoon    Bi-Carb Soda

1-2 extra     & nbsp;     Bananas for decoration

 

 

Mix together bananas, honey and oil. Add flour, baking powder and bi-carb soda. Mix lightly, spoon into well oiled muffins tins. Thinly slice the  extra bananas and top each muffin with 2-3 slices. Bake for 15 minutes at 180oC. Serve

Be sure to substitute agave nectar or brown rice syrup for the honey in this recipe. Many vegans do not eat honey as it is produced by an animal.

Candied nuts - heat dry sugar in a heavy saute pan (not non-stick) until it all melts and turns light brown. Add slivered almonds, pecan halves or your choice of nuts and stir until the nuts are coated. Being very careful not to burn the living daylights out of yourself with hot sugar, turn out the nuts onto a sheet of tinfoil, then immediately spread into a thin layer with a long-handled, heat-resistant spoon. Once they cool and harden (happens very quickly), break any large pieces apart with your fingers.

I really like adding a little cayenne pepper to the sugar before caramelizing it.
