I am a pretty new vegan and for lunch I usually have a salad everyday. Now that the weather is getting cold, I end up dreading my salad. Does anyone have any good vegan lunch ideas that I can heat up and be warm?
I rather like pasta dishes because they travel and reheat very well. Soups and casseroles are always good.... chunky things with plenty of beans, barley and lentls are perfect with some crusty bread on the side

Most days I eat a whole grain and vegetables for lunch. I also occasionally bring leftovers like pasta, chili and tofu dishes.

I like making pots of stew using mediteranean vegetables like tomatoes, peppers, onions, sometimes olives etc. and chickpeas, spices. Then take some to work with a piece of pitta bread to dip in. very warming!
i make a huge pot of this and freeze it to eat whenever.. its really good. I add a lot of extra veggies to mine, lots of celery and carrots. Good recipe to play around with :)

I prefer homemade, but those Campbell's Soup-At-Hand things are good, so I hear. Just pop 'em in the microwave.
Try making some Spicy Black Bean soup to take with you! If you warm it up, its just the thing for chilly days. :)
You might want to try a veggie quesdilla- they're great to dip in the soup too.

And it's got all kinds of tasty veggies in it, so it's a good trade-in for a salad! :) I made a full batch and kept it in a tupperware bowl in my fridge, then put some in a thermos and took it to work with me every day. The whole batch lasted about a week or so.
