Pumpkin Pie
INGREDIENTS:
3/4 pkg. (454 g) Medium Firm Tofu, well drained and crumbled
1 398 ml can pumpkin
250 ml light brown sugar
75 ml oil
25 ml molasses
7 ml cinnamon
4 ml ginger
2 ml nutmeg
5 ml salt
5 ml vanilla
DIRECTIONS: Preheat oven to 180 C (350 F). Blend all filling ingredients together until smooth and creamy. Pour mixture into an unbaked pastry shell. Bake for 1 hour. Chill and serve.
i don't necessarily think there's anything wrong with vegans eating refined sugar. i basically agree with this:

however, i personally avoid it as a rule in an effort to stay away from processed foods and also because i usually only eat organic products; and in the case of sugar (and coffee and cocoa and bananas for that matter), also prefer to buy fair trade.
(sorry to jump on the off-topic train, at least it bumps the great recipe--i've used this one before, but next i want to try one that i saw on fat free vegan it looks good too)
