Vegan Sandwich ideas?

Veggie since forever recently become vegan. I miss cheese greatly but I'll survive!


So yes, sandwich ideas please?! I normally go for wholemeal pittas....

Anything and everything- Vegan.  :-)

(ps- best breakfast ever- chunky wholegrain bread crunchy peanut butter and marmite. trust me)

I think hummus makes a good base... lots of different types available commercially and you can always make your own as well.  Team up with cucumber slices, grilled aubergine slices, tomato, all kinds of things.   If you like salty things like Marmite you could try Tapenade... a black olive paste.  I make a 'Curried Red Lentil Spread'... but you could adapt the recipe to include different flavours.  And mashed beans could be interesting in a 'refried bean' sort of way... team up with strong flavours and interesting textures.  Pity you're not going to eat eggs any more because that offers a lot more variety.

My favourite is roasted mediterranen vegetables and hummus yummmmmmyyyyy!

Well,

I recently had a veggie melt at Bob's Big Boy. It was deliciouis.

It had mozzeralla cheese, (you might consider tofu rella)

Sliced tomato, avacodo, red onion, lettue and pickles with 1000 island dressing.

I made mine at home with regular cheese, and melted the cheese in the oven to omit toasing the bread in butter. I am going to find a good canola spread to toast mine in the pan tonight.

It was quite tasty. You might try this sandwich even without the cheese and just toast the bread.  I used a good whole wheat bread.
I am going vegetarian in my diet but have not eliminated dairy. I have just cut back on it, but no meat.

One or a combo of the following...

Falafel (can buy them ready made), hummous, beetroot, smoked tofu, any flavoured, cooked tofu, mashed pinto beans with salsa, mashed white beans with vegan pesto, almond butter, cashew butter, PB (obviously!), pumpkin seed/ sunflower seed butter, avacado, seeds of any variety sprinkled over hummous, chargrilled veggies and garlic paste, mock meats of any type, leftovers, bean pate, mushroom pate, fruits, dried fruits, raw veggies with dressing, stir fried veggies, canned ratatouille, bean burgers, nut roast slices, bacos (bacon flavoured bits) vegan 'cheese' (made of soy and varying starches), cereal and soy yoghurt mixed (it does work!), marmite, tempeh, tempeh 'bacon', bean salad (can get cans), veggie/bean curry/ thick daal....

phew. Enjoy!

I like avocados, so I make avocado sandwiches - avocado, sliced; baby spinach; lettuce; cucumber; tomato; alfalfa sprouts - I sometimes add cheese.  I've made it with honey mustard and mayonnaise.  It's delicious!

I also like all of the above with hummus too.

I'm a big fan of the vegan burrito wrap :) You can put it all in a pita as well of course.

I mix together some brown or Spanish rice with black beans, tofu or whatever vegetables are on hand...add salsa and avocado/guac maybe some Tofutti Cream Cheese or Sour 'Cream' and shredded lettuce, tomatoes and onion.

It's awesome!

 

I'm not a huge sandwich person but a few times a month I make a really fantastic sandwich.

Two slice of whole wheat bread, toasted

Veganese

4 or 5 slices of peppered tofurky

Romaine Lettuce

Tomato

Red onion

Turns out to be about 250 calories depending on the weight of each item and the bread. Very filling too.

I have 2 favorites that are vegan-friendly (even though I"m not):

Grilled tofu (grill slices of firm tofu on a cast iron pan--can do a batch and put in the fridge to use later), grilled red pepper (same as for tofu), dijon mustard, and then whatever veggies are around: lettuce, sprouts (especially sunflower!), tomato, grated carrot, etc.

Black beans (best cooked from dried with jalepeno, tomato, onion, garlic, but can use canned too--even better if you fry an onion first, then put in the canned beans with some tomato paste and heat, can mash up a little with a fork or a potato masher to make it "stick" in the sandwhich better), avacado (optional), tomato, cilantro, maybe some salsa if it's around. I often put on extra-old cheddar too (for non-vegans reading this post!).

Dont make fun of me for reading Gwyneth Paltrow's blog, but this vegan "bacon" and avocado sandwich recipe of hers looks really yummy.

I'm not vegan but I've been looking up vegetable sandwiches recently! :D

At the moment, I'm currently on hummous and salad mostly but know that I will tire of it...loads to work there with though ;-)

 

ps- can we get Bacos in the UK does anyone know? I used to get them when I lived in Saudi Arabia (where they were prevalent due to pork being illegal!) but have never seen them since....after 10 years I'd like to try them again!

my favorite vegan sandwiches...

 

Smoked tofu, alfa sprouts, chilli jam

 

soy burger and jalepeno relish, lettuce, sliced cherry tomatos

 

avocado, salsa, lettuce, jalepenos

 

falafal and chilli jam and sometimes soy yogurt with tamarind, tomatos

 

hummus and salad or sundried tomatos, grated carrot, olives or a combination

 

tofu tikka-baked tofu in a tikka sauce using soy yogurt instead or regular yogurt

 

tofu-naise, scrambled tofu with herbs and vegan mayo, perhaps some marmite or yeast extract, salt and pepper

 

marmite and soy butter.

 

Peanut butter and... Jam, grated carrot, mashed banana (either of these)

 

Chocolate spread and either.... sliced banana, strawberries, berries

 

sliced banana and honey, or with soy yogurt and/or slivered almonds

 

pureed cashews, and yeast extract, spicey pickle, lettuce or just cucumber

 

All in a wholegrain or oatmeal batch bread sandwich.

I use these base ingredients for my pitas and wraps:

Avocado, Red Onion, Lettuce, Red Pepper Slices, Bean Sprouts, Tomatoes, Chipotle Humus, Boca Burgers, Boca Spicy Chick'n Pattie, and most importantly, BBQ sauce!

I usually dice the burger or chick'n patty and put it in a wrap with the other ingredients or spread the humus inside a pita and put in the other ingredients.  IT'S DELICIOUS!

use veganese instead of a mayo and there you go!

it was delicious. I'm not vegan so I used mayo and made some adjustments with what I had at home. I had zucchini, button mushrooms, green peppers, and onions. I put in italian seasoning into my mayo mixture and it was delicious! I also put a dabs or laughing cow swiss spread AND IT WAS REALLY GREAT. I had it with a side salad with balsamic dressing.

 

Here are some more! Just make adjustments once again with vegan cheese and veganese.
