Vegetable and bean chili

Recipe Ingredients for Vegetable and bean chili

1 tbsp olive oil
2 tsp garlic, finely chopped
1 lb
15 oz red beans, drained and rinsed
15 oz garbanzo beans, drained and rinsed
14 1/2 oz tomatoes, diced
2 c tomato juice
8 oz tomato sauce
2 c frozen corn
2 tbsp chili powder
1 tbsp ground cumin
3/4 tsp salt
1/8 tsp ground red pepper

Recipe Directions for Vegetable and bean chili

  1. heat oil over medium high heat

  2. sautee garlic until soft

  3. stir in remaining ingredients

  4. heat to boiling

  5. reduce heat to medium-low, cover and cook for 15-20 minutes
