Quick and simple dish, ideal for lunch or after work
| 5 | eggs |
| 100 | ml milk, skimmed |
| 1/2 | medium onion |
| 2 | medium potatoes |
| 1/2 | red pepper |
| 2 | tomatoes |
| 50 | g baby corn |
| 1 | tsp olive oil |
| 50 | g cheddar cheese |
| 1 | spring onion |
| 1/4 | tsp black pepper |
| 1/4 | tsp salt |
- beat the eggs with the milk
- add salt and pepper
- dice the vegetables and chop the onion
- cook potatoes and carrot in the microwave for 3 minutes on full power
- meanwhile heat the olive oil in a frying pan
- fry the potatoes, carrot, red pepper, onion, spring onion and baby corn until golden
- add the diced tomatoes (seeds removed)
- add the egg ann milk mixture and turn the heat down
- cook on low heat until almost set
- grate the cheese over the top, and finish off under a hot grill until golden brown and crispy
- cut into 4 and serve
- nice served with a side salad
