Vegetable Soup (Ww-No Points) Recipe

This is a weight watchers soup with "no points value." Great with crusty french bread. I eat it when I'm still hungry but have neared my daily calorie limit. It's filling and very satisfying--plus, look at all those vitamins. You can't lose with this soup. Actually you WILL lose, weight, that is! NOTE: the broth is supposed to be fat-free, low-sodium vegetable stock, but this analyzer couldn't find it.

Ingredients
2 garlic cloves
1 medium onion
2 medium carrots
1 medium red pepper
1 celery stalk
2 small zucchini
2 cups green cabbage
2 cups kale
2 cups cauliflower
2 cups broccoli
2 tsp thyme
8 cups low sodium vegetable broth
2 tbsp parsley
1 tsp salt
1/2 tsp pepper
Directions
Put vegetables, thyme, and stock into pot. Cover and bring to a boil over high heat. Reduce heat to low and simmer 10 min or until desired tenderness. Turn off heat, add parsley, salt and pepper. Yields about 1 1/2 cups per serving.
