This is a weight watchers soup with "no points value." Great with crusty french bread. I eat it when I'm still hungry but have neared my daily calorie limit. It's filling and very satisfying--plus, look at all those vitamins. You can't lose with this soup. Actually you WILL lose, weight, that is! NOTE: the broth is supposed to be fat-free, low-sodium vegetable stock, but this analyzer couldn't find it.
Recipe Ingredients for vegetable soup (WW-no points)
| 2 | garlic cloves |
| 1 | medium onion |
| 2 | medium carrots |
| 1 | medium red pepper |
| 1 | celery stalk |
| 2 | small zucchini |
| 2 | cups green cabbage |
| 2 | cups kale |
| 2 | cups cauliflower |
| 2 | cups broccoli |
| 2 | tsp thyme |
| 8 | cups low sodium vegetable broth |
| 2 | tbsp parsley |
| 1 | tsp salt |
| 1/2 | tsp pepper |
Recipe Directions for vegetable soup (WW-no points)
Put vegetables, thyme, and stock into pot. Cover and bring to a boil over high heat. Reduce heat to low and simmer 10 min or until desired tenderness. Turn off heat, add parsley, salt and pepper. Yields about 1 1/2 cups per serving.
