Recipe Ingredients for Vegetable Tagine with Chickpeas

2 tbsp olive oil
2 onions , chopped
1/2 tsp each ground cinnamon , coriander and cumin
2 large courgettes , cut into chunks
2 chopped tomatoes
400 g can chickpeas , rinsed and drained
425 g vegetable stock
300 g frozen peas
1 chopped coriander , to serve

Recipe Directions for Vegetable Tagine with Chickpeas

  1. Prep 10 mins, Vegetarian, Vegan, Low-fat, high in fibre

  2. Heat the oil in a pan, then fry the onions for 5 mins until soft.

  3. Stir in the spices.

  4. Add the courgettes, tomatoes, chickpeas, and stock, then bring to the boil.

  5. Cover and simmer for 10 mins.

  6. Stir in the peas and cook for 5 mins more.

  7. Sprinkle with coriander, to serve.
