Recipe Ingredients for Vegetable Tian

6 tablespoons light olive oil
2 medium potatoes
1 small onion
1 medium zucchini
1 medium yellow squash
1 medium tomato
1/2 tsp salt
1/2 tsp black pepper
1 tsp rosemary
1 clove garlic
1/4 cup chicken broth
1 tsp dried oregano
1/4 cup parmesan cheese

Recipe Directions for Vegetable Tian

  1. preheat oven to 375. heat 3 T oil in large skillet over med heat. add onion and garlic, season with salt and pepper, cook until soft. abt 4 minutes. spread in 9" gratin or roudn baking dish.

  2. arrange vegetables on onion in slightly overlapping circles, alternating zucchini, squash, tomato (and eggplant, optional).

  3. top with broth (or dry white wine), 1 T oil, oregano, salt, pepper. bake 30 minutes. drizzle with remaining oil. bake until vegetables are tender, 30 min more. serve with parmesan.
