So. I think I eat about ONE serving of veggies a week - I just don't like them as much as what I normally eat! I absolutely love sweet things - does anyone have any vegetable recipes that are fairly sweet? Even if there's something you add sugar or syrup to! ANYTHING. I really, really need to eat more veggies! Yell

There's a book out there that has tricks for adding veggies into dishes in such a way that they go virtually unnoticed.  I'm not sure of the name, but I've seen it mentioned on these forums before.  Hopefully someone else will know it.

Cook up some carrots and toss them with a little bit of butter, ginger, brown sugar, and maple syrup (regular or sugar free).

As a kid, I absolutely loved acorn squash - my mom made it so good, it was like eating dessert (straight out of the shell, of course...)

And sweet potatoes are wonderful too - pretty much served in the same way:  bake in foil until done.  Cut into chuncks, or just mash, and add butter, spices, and brown sugar.

Cut up zucchini into chunks, lightly coat in olive oil, then lightly sprinkle/toss in cinnamon sugar.  Roast in oven until tender.  I highly recommend this method with butternut squash as well.

"The Sneaky Chef."  It was written for kids, but really applicable for anyone who needs creative methods of introducing more veggies into their cooking.

I think it's a book by Jerry Seinfeld's wife, um....Shoshana or something.

Good, fast, and easy: buy frozen winter squash, comes in a box in the frozen vegetables section.  Nuke it and add a little butter, sugar, maple syrup, and pumpkin pie spices (cinnamon, ginger, cloves, etc) and it's kinda like a pumpkin pie with no crust.  Actually if you wanted you could even add a couple beaten eggs and bake it to make kind of a pie.

Fennel is good if you like licorice flavor. I used to eat apples dipped in honey, and I bet fennel and carrot sticks would be good like that.  And hey, there's always peanut butter!

You can try different flavor stir fry dishes.  You can find some decent cal versions in the freezer sections.

What about sneaking shredded/pureed veggies into sweet baked items like healthy brownies, cake or muffins?
