Recipe Ingredients for vegetarian bok choy stir fry
| 2 | cups chopped asparagus |
| 2 | cups broccoli |
| 3 | cups bok choy, washed, stems cut off, and cut into strips |
| 1/2 | cup chopped red onion |
| 1/2 | cup chopped scallions |
| 2/3 | cup water |
| 1 | tsp grated gingerroot |
| 1 | tbsp vegetable oil |
| 2 | tbsp soy sauce |
| 2 | tsp cornstarch |
Recipe Directions for vegetarian bok choy stir fry
- Mix soy sauce and cornstarch together in small bowl and set aside for future use.
- Heat oil in large skillet until shimmery. Add onion and saute until translucent. Add asparagus, scallions, broccoli, water, and gingerroot to skillet and saute. Add salt, pepper, and garlic powder to taste. Cover, reduce heat to medium and cook until asparagus is tender.
- Add bok choy and stir until wilted.
- Add soy sauce mixture and bring skillet to high heat, stirring quickly.
- Serve over a bed of brown rice.
