Here's a tasty one that was given to me by another CC member

Flamel's Vegetarian Chili

There's also a really quick & easy version.  Just dump a jar of any salsa and a can of drained beans, any kind, into a saucepan and heat it up.  To make it chunky, first chop peppers, onions and tomatoes and then simmer it until the vegetables are cooked.

Here's two of mine:

Vegetarian chili

Adzuki bean chili

Sometimes I add 1 tbsp apple cider vinegar, 1-2 tsp sugar, and a few drops of liquid smoke to spice things up.  Or I'll saute some kale with garlic and serve the chili on top.  If you like lots of heat, throw some whole red chilis in while it simmers, or add some fresh jalapenos toward the end.  Good stuff!  Love my chili!

Here's a slightly different take:

Sweet Potato Chili with Pinto Beans

I make mine in the crock pot, using  1 large can tomato sauce,(or sometimes I use crushed tomatos)  2 cans rotel dice tomatos w/chillies, 1 quart veggie broth, l diced onion, 1 diced bell pepper, 1 jalepeno (can add a fresh chilli pepper or other depeding on heat preference.) and 1 tablespoon chilli powder (more or less depending on heat preference). I also add a couple tablespoons of molasses, and a tablespoon of cinnamon. I add a cup or so of kamut (or wheat berries) and cook low for several hours.

Once can easily customize it with what ever veggies or flavors you like.

This is my favorite recipe.  I usually add a little more spice than this recipe calls for, and also paprika.

ADOLPH-that looks great but dont laugh, were not chili eaters, so, what r chili beans??

My recommendation is to go to www.eatingwell.com and search "chili" or "Vegetarian chili" and you will come up with several really good versatile recipes that have the nutrition info available.

I never use a recipe when I make chili. As long as you know what spices to use and what flavors you like, the type and amounts of veges, grains and beans you can use is virtually limitless. Experiment a little! ;)

I think chili beans are just pinto beans that are canned with a chili flavored sauce.  Probably lots of sodium and other bad stuff.. never tried them.    I just use some combination of black, kidney, and/or pinto beans instead.

 The only problem with that is sometimes you will make a really awesome chili and then never be able to replicate it!  I usually use recipes as a guide, but I am constantly making my own little changes while I prepare the food.  I also rarely measure anything.  However this confounds my husband (who insists on measuring absolutely everything, yes, even the water to boil pasta!!) Whenever a dish turns out really well, he knows he will probably never have it quite that way again... :)

My recipe:

2-3 onion, 2-3 pepper (red and green), 2-3 garlic, 2-3 zucchini - saute in olive oil.

3 jars of tomato sauce (or make your own) - start heating, and add veggies as they cook. 1 packet of chili mix, plus extra red pepper flakes, chili, and maybe something else... can't remember - cumin? ETA: Yep, cumin. Just shake some in - an hour later, taste, and add more if desired.

Let cook for as many hours as you can, and in the last hour, add several cans of black and kidney beans.

Serve with sour cream, cheese, brown rice, corn bread....

And now I know what I'm cooking this weekend :)
