Vegetarian at college/boarding school?
heyy everyone =]
i'm lacto-ovo vegetarian, and go to boarding school. however, i don't like the taste of milk or eggs, so i can't drink/eat them alone. this means no milk in my cereal, no omelettes, fried/scrambled/boiled eggs, quiche, etc.
so here's the thing: school food sucks. a lot of the time, the vegetarian option is pasta. i really need some more protein, and just healthier food over all.
it would be a lot easier if i could cook for myself, but all i have access to is a fridge and a microwave. i'm thinking about buying a magic bullet, so that might help a bit too.
so, all those things considered, does anyone have some ideas for food i could make that don't involve massive amounts of preparation, can be cooked in the microwave, and are vegetarian?
i know, it's a lot to ask.![]()
any help would be massively appreciated!
-Hummus and pita bread
-Amy's frozen meals (I've never had them so I can't say from personal experience whether I think they are good, just pop them into the microwave and it's pretty convenient
-Steamed vegetables in the microwave with your favorite seasoning
-Bagels with peanut butter/jam/whatever spread you like
Maybe pick up mixed nuts+dried fruit for more protein?
Not healthy... but I have a recipe from when I lived in the dorms for microwavable vegan brownies, if you're interested :-D

Quinoa is easy to keep and prepare, just boil for 15 minutes on a hot plate or an old electric coffee pot. You can make a big batch and keep it in the fridge and nuke as needed.
Its really good and healthy and you can mix it with frozen veggies.
