Vegetarian recipes for little ones?

My son is a little over a year, and won't eat a lot of foods. He acts like a drama king:), and pretends to gag. He loves anything cooked vegetable wise, but I really want to make sure he gets everything his little body needs. Does anyone have recipes that taste good, but are not overly seasoned; I really want to broaden his diet, but keep him really healthy, and of course, vegetarian in the process.

Anything that is fun and healthy will be greatly appreciated!

Does he like baked beans in tomato sauce?  If he does, then you can do a lot of different things with other types of beans.  Blitzed in a food processor they make a good base for little bean-burgers and sausage shapes.  And if you pulse them until they're crumbly they sub nicely for minced beef in dishes like Cottage Pie and Bolognese sauce.... always favourites with children.

My son is the same way with the whole sensitive gag reflex. He really goes for the spaghetti squash. I baked the squash, scraped it out with a fork, put some pasta sauce on top. It's good for us adults too. :)

Does he like grains? Like any type of veggie sandwich, toast, spaghetti, pasta, crackers, pancakes, oatmeal, etc.

If I were you, I would just get a bunch of cookie cutters.  Pretty much all kids will eat anything if it's shaped like a dinosaur (I know I will...). :D
