You might have more luck in both the Vegetarian forum and the Recipes forum. :)

These are some of my particular favourites...  They're all in the CC database, calorie-counted and usually for '1 serving'.

I would recommend the website Fatfree Vegan.  It has a lot of very healthy, low-fat, and delicious vegan recipes.  One of my favorite recipes from the site is the North African Chickpea and Kale Soup - it's very simple to make, and the mix of spices makes it very flavorful.

I came up with something yesterday that came out pretty good -- Sweet Potato and Spinach gnocchi -- I steamed a medium sweet potato until it was very soft. Then I mashed it (skin and all) and added 3/4 cup of frozen spinach and 3/4 cup sprouted grain flour (you can use the flour of your choice, probably a whole grain flour is best). You can add more flour if you like stiffer gnocchi....


Blend it all and boil up some water spiced to your liking (I added 1 teapoon each ginger, turmeric, cumin, coriander and garam masala) --  form the dough into small balls and drop into boiling broth -- cook until 1 minute after they float to the top (do in batches of 4-6 depending on the size of the pot).

They're good with a creamy soup-sauce or something like that..... High in Beta Carotene.
