Kind of getting bored of my cheese, lettuce, cucumber and onion sandwhiches

 any ideas you can pass along?

try spinach, hot pepper jack cheese, tomato & onions, put some brown spicy mustard on to make it a little more interesting

What about Eggplant & Roasted Peppers or Sundried Tomatoes? You can add arugula, too, for a little dark leafy veggie.
Maybe grilled cheese? Or here's another idea... When I was younger I used to eat avocado sandwiches lol. It spreads on if you mash them and it's so filling, it's like you're getting your meat and mayo. I ate them just like that, but you could do that and then add some cheese and lettuce etc. I've never had to make a sandwich vegetarian though so that's about all I have.
I like hummus, lettuce, onion and tomato in a whole wheat pita (or wrap.) I squeeze a little fresh lemon juice over the vegetables first.

I love plain hummus, spinach hummus, garlic hummus and roasted red pepper hummus... yum yum yum.

And I had a great sandwich not long ago of cream cheese with sliced apples and roasted red peppers ... it was amazing!

You could also make sandwiches using Boca or Morninstar or Gardenburger patties (or other veg*n options).

Grilled onions, peppers, garlic, etc ... are great on sandwiches or wraps.

Peanut butter, almond butter, cashew butter, with Jelly or preserves or honey (unless vegan) ... are also nice.

I've also seen people make tofu salad sandwiches (sort of the way you'd make egg salad sandwiches ... with chopped celery, onions, mayo or a mayo sub and tofu... plus a dash of pickle relish.)

And cottage cheese on toast is a great sandwich, too. Since you eat cheese, don't forget there are a lot of different flavors of cheeses out there!

Some of them sound pretty darn good. I think they give calorie information on them, too :)

I'm going to throw out an idea that may sound weird, but is really very good - roasted cauliflower sandwiches.  One time I roasted a humongous cauliflower and had a lot of leftovers and decided to try it the next day in a sandwich.  I used a bit of sundried tomato aioli (you can use your favorite spread), some thinly sliced tomatoes and red onion.

How did you roast the cauliflower?  I'm interested.    Also, in our family, nothing's sacred when it comes to being put on bread, right down to the mac & cheese.  Thick mashed Potatoes with corn added, sometimes baked into cakes.......you can season those little babies!  If that isn't your style, put steak sauce on them.  I love Elvis's sandwiches.....Peanut Butter and banana's. 
Mango can be really good on a veggie sandwich, especially with a good strong cheese.  Actually I like lots of fruits on sandwiches.  A tart green apple like a granny smith sliced thin served with a sharp cheddar cheese and baby spinach is really quite yummy.
To roast the cauliflower - cut into florets, not too small.  I usually use about a tablespoon of olive oil and drizzle that over the cauliflower pieces.  Then I put on an herb or spice that strikes my fancy, often cayenne or paprika, but it could be rosemary or thyme.  Put it on a baking sheet and put in the oven at around 450.  My oven isn't as reliable as it could be so I start checking it around 20 minutes and take it out when it's softened some but still substantially "chewy".

I slice extra firm tofu, marinate it for 3 or 4 hours in teriaki sauce with sesame seeds and then grill it in a toaster oven for 15 minutes.  I put it on Eziekiel bread (toasted) and put on tomatoes, lettuce, avocado and low-cal mayo and mustard--it's very tasty and very filling.

Also, look into portobello mushroom sandwiches--I have made them in the past by frying the caps in a pan with a little olive oil and worchester and you serve it on a bun, just like a burger, but with more zing!


Amy's makes a bunch of really good veggie burgers.  But some  regular sandwiches?  Some may sound odd but I guarantee them all:

Avacado and tomato
Peanut Butter and Marshmallow Fluff
Peanut Butter and Banana
Queso Blanco (White Cheese) and Jelly
Hummus and Tomato
Ketchup
"Tuna"  Mashed Chickpea or White Kidney with Celery and Mayo
Tomato and Motzerella


Also, there's always tofurkey!  And I have many others if you're willing to brnach out into pitas and wraps.  :)

 ooh that sounds so good.  I think I'll roast some peppers, eggplant, and even some mushrooms so I can have a sammich the next day.  Ooh, I'll add kale to the mix too.

I also like tofurkey, smart deli slices, faux chik'n, etc.

lets see..i just love this..white bread + chopped up lettuce + fruits(banana/tomato/kiwi are the best)...

I love a Dagwood style sandwich.  For those that don't know, it is a sandwich that has everything and the kitchen sink!  It is a lot of fun to go through the produce isle and pick out ingredients and get some good whole grain bread.  I go home, pile it high and then smash it down! Some of the best things I have included on a sandwich are: raw Zucchini, sunflower seeds, green onions (sliced on a bias), roasted peppers, tons of sprouts, sliced mushrooms, and t5he list goes on.  Really anything that you would put in a salad can go on a sandwich. 

One of my favorite though is a Caprese sandwich.  Get soime good crusty bread, Fresh Mozerella, basil leaves, ripe tomatoes, drizzel with Extra Virgin Olive Oil and sprinkle with kosher or sea salt.  Man that is GOOD! 

Another really good one is a Potato Tortilla sandwich.  Slice some left over Potato tortilla (this is a potato and egg mixture which is baked, kind of like a quiche, but with out the crust) and put between slices of some good crusty chewy bread that has been rubbed with raw garlic (take a clove of garlic trim the end and then rub on the bread), rubbed with a roma tomato, drizzled with Extra Virgin Olive Oil, and sprinkled with coarse kosher or seas salt.  Simply delish! 

Wow! Lots of recipes here for me to try. Here's one I posted a while back to get the calorie content. I make these once or twice a week.
