buy some meatless meatballs and simmer them in a tomato sauce to make a "meatball" sub...mmmm....throw on some low fat havarti

or try out some veganaisse (be careful, some brands are super high in fat)..mash up a boiled red potato with some medium tofu.  chop up  some celery and carrots, and mix in some spicy  brown mustard with the veganaisse...you've got a great tofu salad sandwich...i love addign a few pieces of romaine for added crunchiness

My FAVORITE SANDWICH EVER!!!

Peanut butter, Honey, and Banana on Whole Wheat (toasted) bread. (Sometimes I add a lil cinamon.... The TEXTURE and TASTE is VERRRRY satisfying! lol. I'm ALL excited about this now...I think I might have that for breakfast. =)

Whole Wheat Bread (toasted)

Thought I'd share one of my favorite veggie sandwiches:

Saute some zucchini and diced onion in a little olive oil or cooking spray until tender, then add salt, pepper and garlic powder or fresh garlic. Then mix in whatever kind of tomato sauce you like (I usually use something spicy) to coat the zucchini. Then use whatever kind of bread/wrap/pita you like to make it a sandwich. It's great with a little low-fat mozzarella or some other kind of cheese. Before I tried this the first time I expected it to just be OK, but it's phenomenal.

Oh no, double post!

sarpsg,

can you get meatless meatballs??? that just sounds soo yummy

Mmmm, not a sandwich, but a wrap, my favorite:

Whole grain wrap
spread of hummus
spinach piled up high
sundried tomatos
sprouts
red onions (even better sauteed in EVOO or grilled)

*drools*

this is just a simple one if you don't have a lot of time...

avocado with tomato and lettuce

I said it was simple xP
