Vegetarian School Lunch Ideas?
I'm a 15 year old laco-ovo vegetarian (no meat or fish, but I'll eat egg and dairy products) and I'm starting my sophomore year in high school in September.
I need some vegetarian low-calorie lunch ideas that will still taste good after sitting in my locker from 7:00 to 11:30 (when my lunch period is) that I can eat and still lose weight. I eat 1500-1800 calories a day depending on my activity level, so it would be helpful if it can easily fit into those restrictions (leaving room for breakfast, dinner, and small snacks throughout the day.)
I've been kind of worried about getting all of the protein I need, so the more protein the better! Any dinner ideas that can easily reheat the next day are also appreciated!
I'm not one of those teenagers who thinks that if I bring "weird" food to school my popularity rating will be demoted (omg, like, what am I going to do if the cheerleaders don't like me!?!?) so that isn't an issue.
Thanks everyone!
I'd suggest a good pasta salad, but that probably wouldn't taste very good after 5 hours out of a fridge :P At school I just used to have sandwiches (usually with jam or marmite or cheese in) but I wasn't calorie-counting then at all. Maybe some sort of vegetable/bean wrap... a piece of fruit is good as a snack, of course... and there's always the recipe thread, there might be something good in there!
You can bring rice, a peanut butter (and jelly, but I personally don't like the pb&j combination), homemade cheese pizza on a pita bread (tomato sauce and cheese on a pita, then microwaved), and my personal favorite, trail mix!
I probably know of a lot more lunch ideas, but I can't seem to remember.
Hummus makes a very tasty, high-protein sandwich filling and doesn't suffer from being left at ambient for a while. I add cucumber slices to mine and pop it inside wholemeal pitta pockets for a nice lunch. An alternative sandwich spread is this home-made Curried Lentil Spread... lots of protein in lentils, of course. This Fruity Rice Salad recipe has lots of flavour & texture and, again, it's even nicer when it's not icy cold. If you've got a wide-necked flask you could take some chunky soups along with a bread roll or some crackers.
Dinners that heat up nicely the next day and that are rich in protein... you can't beat things based around beans and chickpeas. This easy 'Veggie Chilli' tastes even better Day 2 when the flavours have had chance to mature a little. Or you could try this Spicy Frittata.... Make double quantities and serve the remaining half heated up with some salad
Thanks everyone! I've been trying to learn how to cook more things, so I'll probably experiment with some stuff before school starts.
I LOVE hummus, and I have a recipe for a chilli that I've made before, but it'll be nice to have a new recipe that I might like more.
Thanks a lot, these suggestions are awesome!
Seitan is high protein and can be used for sandwhiches or chopped up w/veggi's. Here's my favorite recipe http://caloriecount.about.com/oven-seitan-rec ipe-r243560
You can also bring black bean taco salad, tofu salad wraps, or rice and veggi's. Go to a store and buy a insulated lunch box also buy an ice pack to toss inside the lunch box to keep your food cool until lunch time.
Get those individual cups of Greek yogurt (go for the plain ones, not the ones loaded with sugar) and freeze them. They should thaw by lunchtime. Greek yogurt has much more protein than regular yogurt.
Also, boiled eggs are quick and easy. You can make a batch at the beginning of the week and keep them in the fridge.
You can also make a high-protein veggie dip by blending beans with spices and olive oil, or making guacamole blended with silken tofu (the really soft kind).
Good for you for packing your lunch every day! It's a valuable skill that will stick with you the rest of your life
Get some of those frozen packs to put in with your lunch to keep it fresh for hours. When used in a good, insulated, lunch bag, they work well.
Also, if you take juice, freeze the juice cans or boxes.
I have long days at school so sometimes I need to pack 2 (or even 3 meals, since I eat about 6 a day) on campus. Easiest to prepare are cold pasta salads. Being a college student makes me always on the run, classes from one end of campus to the next, etc... So something easy and simple I can whip up -- throw beans, cooked pasta, whatever veggies (corn, cucumbers, whateveR) you like together and lightly toss it with dressing (my faves are italian and raspberry). If you want extra protein, just add in some tofu chunks. If you go with soft tofu, it absorbs the taste of the dressing nicely and doesnt taste so bland.
