Vegetarian South Beach recipes/suggestions?
Hi everyone. I am thinking about going vegetarian for the new year, but I was wondering has anyone had success with vegetarianism and south beach? I'm most concerned with phase 1 because it's so restrictive.
Any suggestions/hints/recipes/fav food discoveries?

Morningstar veggie and sausage patties along with variations of the egg dishes in the book. I added a lot of peppers, spinach and brocolli to supplement the nutrition.
For snacks the Slim-Fast low-carb shakes and almonds worked well.
If you subscribe to the South Beach website, they have some good veggie recipes as well (if you like to cook!).
I have had a lot of success with low-carb diets because they stifle my appetite; however, I have never been able to maintain the weight loss because as soon as I introduce more carbs -- the hungrier I become. If you look at the nutritional content of what you are eating, you might be surprised. I have come to believe that a balanced diet is much better and I need to use willpower to control portions.
On the other hand, if one is very overweight, it is probably best to get the majority of the weight off first, then try to fine-tune the maintenance and nutrition.

Thanks for the suggestions. I have forgotten that the diet allows the soy products like morningstar.
I have been on the diet for over a year now and have lost 35 of the 65 lbs I was going for, but just before Christmas I found out I have problems with my gallbladder and need to limit animal fats and spices. I thought it might be the right time in my life to go veg. I wanted to start phase 1, and I realized without meat I didn't know what to have!
