Vegetarian Sushi recipes?

I just tried to make some vegetarian sushi and it turned out either:

1) horribly wrong

or

2)I suck at making Sushi.

 

Please give me some tasty recipes that you know taste good. I got my recipe online and it wasn't that great. Thanks! I really want some good veggie sushi!

I don't know, cause I suck at it too. I read this and briefly thought 'I should make sushi for dinner' then quickly remembered my sushi-making skills. Calling now to make reservations at my favorite sushi place :D

Did you make cucumber rolls?

Avocado rolls?

ginger-sesame-tofu rolls with carrot strips?

What did you try? Maybe you could try vegetarian "sashimi" instead .... where you just lay the food item on top of a little mounded shape of rice?

Was it the rolling the sushi rolls that didn't work, or was it the ingredients?

well, the recipe that i used allowed me to choose my own veggies. I used green bell peppers, carrots, cucumbers, zucinni and avocado with rice. The vegetables tasted fine, but all together it wasn't very good.

 

 

Actually, sashimi isn't really vegetarian at all because sashimi shouldn't include anything but raw fish.  Sushi refers to small bites including seasoned sushi rice.  The kind on little pats of rice is nigiri sushi, while the rolled kind is maki.  The rice is never plain, it has to be seasoned with sugar and rice vinegar (and traditionally salt and  kombu, a type of seaweed) to be sushi rice.  And never use long-grain rice for sushi -- it will never taste right.  Likewise, you MUST wash your rice thoroughly in cold water before steaming for the flavor to be good.  Honestly, proper rice preparation is the hardest part of sushi, I think.  Here's a good recipe:  http://www.foodnetwork.com/food/recipes/recip e/0,,FOOD_9936_1362,00.html

I think one of the places you went wrong was the green bell peppers because that's something you don't really see in traditional sushi.  Zucchini doesn't really find it's way in sushi very often, either.  The best bet would be to find traditional recipes and keep it fairly plain to begin with.  If you eat eggs, you can make omelette (tamago) sushi, too.  Toasted sesame seeds and nori are also your friend, especially with vegetarian sushi because they add a lot of flavor.  Be sure to toast your nori or make sure to buy nori that is especially for sushi, too.

Thanks! I didn't realize the rice would be so complicated. I did get the rice vinegar and made it that way. I used long grain rice though, and maybe that's where I went wrong. No bell pepper hmm? I think I will eliminate that next time. What vegetables are good for vegetarian sushi?

avacado is good,  also putting cream chesse inside with your veggies makes it not so dry,  we even made a roasted red peper bree roll ok totally not asian, but still tasted good dipped in wasabi and soy.  oh I try to make veg sushi once a week,  I  eat fish but i live in a land locked country and dont trust the fish.

I don't know if you have a Japanese grocery store near where you live, but the one by us has all sorts of veggies like you find in sushi at a restaurant (mountain yam, pickled plum etc...) and even natto (fermented soy beans) my favorite sushi filler. Post if you try again with more success and what you did (our sushi out last night was yum!)
If you're looking for the perfect filling, I always and only (mostly) use...

1) Avocado
2) Green Onion/Scalion (the greenest parts)
3) Cucumber
(and black seseme seeds for show.)

Don't forget the wasabi and the soy sauce!

i learned to roll sushi from my host mother in japan.  you need the glutinous rice, and it's best if you add the tiniest bit of granulated sugar and rice wine vinegar.  the vegetables don't matter... i usually go with cucumbers, carrots, if you cook an egg omlet-style you can slice it up and put it in, asian groceries sometimes have kampyo (pickled squash) or pickled diakon radish that i love.  i see nothing wrong with bell peppers if you like them, you can use any veggie that makes you happy :o)  avocado works, but i personally don't like it.  you can also put seaweed salad into it if you have access to somewhere that makes it, that's really tasty!

if you're having trouble rolling it, you can always make what's called temakizushi, it means hand rolled sushi.  just cut the nori into squares, put a little rice and some veggies on, and roll it up.  they actually have this style at some sushi restaurants, i'm not making it up ;o)

Thanks! I think I just had high expectations for my first time ever making or having sushi. Sadly, I don't have many great Japanese restaurants or stores, considering I live in a small city in Oklahoma. I will try it again with all the suggestions!
