Are vegetarians smarter than grass?
And since you have, please post to say whether you're a vegetarian or an omnivore. Just interested to find out whether the title is provocative enough to get a response from people in both groups.

(And bonus points if you have some good ideas for vegetarian sandwich fillings; I think my son is getting tired of peanut butter, hummus, and cheese! That's three different ones, BTW, not one sandwich with all three...)
Vegan!
My 3 favorite sandwich fillings:
- Crumble some tofu, stir in some soy (or regular) mayo, chopped red onion, and chopped fresh dill and black pepper... let the flavors blend together in the fridge for an hour before eating.
- Pan grill a portabello cap that has been brushed with olive oil... sprinkle with seasonings of choice and garnish with lettuce, tomato, etc. I love these cold!
- Mash chickpeas and stir in some soy (or regular) mayo, diced celery, diced onion, salt and tons of black pepper.
Har har, sure did make me look. I'm a vegetarian, and not sure if my response to this makes me equivalent to grass or not. I suspect the grass doesn't get a vote?
Anyway, on the sandwiches - sometimes I put sunflower seeds on instead of the big three mentioned above and then add lots of veggies. They're nicely chewy but tend to spill out a bit sometimes.
My favorite veggie sandwich has avacado as the fatty delicious layer, usually with roasted red peppers, cucumbers, and red onions. Also, I love BBQ tofu, if you cut it in wedges and cover it in BBQ sauce, it is a bit like ribs, a bit crispy in places, a bit moist in places. Grilled tofu sandwiches are great too!
Post description alone made for a temporarily unhappy mod. I am however greatly amused after reading the post itself. :D
I am an omnivore, sort of. Specifically I am a pescetarian with veg-friendly tendancies. Of course, the thread caught my attention not because of my eating perference, but because I'm the moderator of this forum and I read all the threads here. I read them sooner than later if they are likely to end up controversial. :)
I don't know how it would work out cold and packed for school, but I am a big fan of Dr. Praeger's Tex-Mex veggie burgers with some barbeque sauce for a very quick and lazy meal. :) Otherwise, any sandwich with guacamole is always good in my book. Or tomato and cheese with pesto. Mmm.

And along those lines, give him the ingredients to assemble his own black bean burrito? (if he has time)

My favorite wrap filling (it'll fall apart on a sandwich) is tofu scramble from Everyday Dish, hummus/veggie mayo, spinach and tomato (onion if your daring). Just use any different spices for the scramble to have variations on the sandwich! I used some ready-made garlic and herb spice and it was amazing!
Calories are not a concern for things to put in his lunchbox. Growing boy metabolism, and all that...!
(Egg salad story: while in Scotland, a land known for its beauty and fabulous people, and not so much for its food [with excellent reasons], my then-husband ordered an "egg salad sandwich" for lunch one day. He was thrilled to see this on the menu! What arrived at our table for him to eat was bread on which resided three slices of hard-boiled egg, a lettuce leaf, and a couple of slices of tomato. Not quite was he was expecting! :-D )
I'm an omnivore. I eat some form of meat or fish almost every day, and eat red meat 3-4 times a week.
As for sandwich filler ideas: Have you tried Tabouli?

i just bought already marinaded tofu and it is delicious, im sure the BBQ one would be great on a sandwich! the brand is Tofettes, but they are sorta expensive :(
i buy this sandwich all the time at my schools convenient store....lettuce, sundried tomatoes, bean sprouts, mozz cheese(i think), some sort of guacamole dip (or just try regular avocados!) and balsalmic vinegar dressing....so yummy
and ok i know it sounds gross but i love peanut butter with pickles on a sandwich. maybe your son will love it. so nutty with a crunchy sweetness....mmmmm

Keeping in check the amount of meet I eat of course, but I love it.
Counting the replies (and their types especially) I guess veg(an/terians) wannabies are far more interested in the topic, which is expected since the title promises to discuss some common feature of the group :-)
About the sandwich I'd put some not too salty and not too fatty cheese in it along with green veggies, it will definitely taste great and will help. And peanut butter is not so great stuff to eat (most of the time) so good thing he is already sick with it :-)

How about making some sort of bean patties, the seven day adventist website, has like a make your own burger/roasty thing, its pretty cool!
Former Vegan, now eating some red meat under the instruction of a nutritionist and a cardiologist (vitamin deficiency, medication and health issues - can't take supplements)
Most days I'm a lacto vegetarian. I do at least one vegan day a week.
Favorite sandwich - whole wheat pita spread lightly with hummus and stuffed with grilled eggplant and roasted red peppers.
Omnivore...but with very strong veggie tendencies.
Sandwich: Fake Chicken (like morning star or something similar), chop it up, mix it with nayonaise (which happens to be vegan I believe), cucumbers and green peppers. Mix it up like chicken salad and put it on a sandwich...so delish.
Fake meatballs (I get mine at Trader Joe's), mix with marinara sauce and soy cheese to create and fantabulous vegetarian sloppy joe. I usually throw some sliced green peppers in there for some greens.
...but claire's favorite sandwich sounds the best! Mine are just more "quick fixes". :)
Omnivore, BUT was a hard core Veggie for 10 years (1/4 of my life)... I still respect veggies and what they stand for and my family incorporates a couple veggie meals a week. We kind of slipped out of it when the kids came.. convenience and variety issues really.
My favorite sandwich in those days was avocado and sprouts on a nice whole grain bread. NICE! You can't go wrong with avocado.... mmmmmmmmm greeeeeeeen grlrlrlrlrlrl....
Definitely omnivore! I've been vegetarian - and even vegan - before, but find that I need meat to keep me sane!
All of the sandwich ideas so far have been great. My favorite: cream cheese and olives (ate that every day when I was in kindergarten).
